Можно ли изготовить и запустить в работу более одной рудной шахты? (или любое другое предприятие).

не пробовала, но сомневаюсь, что можно больше одного предприятия сделать
потому что строчка для каждого вида только одна и как в ней 2 предприятия будут наслаиваться друг на друга? если у них разное количество рабочих, уровень, производительность?
но возможно @Support уже что-то планирует для расширения
